Description:
In Liguria, pumpkin gnocchi are typically served in the autumn. These gnocchi have a delicate, slightly spicy taste. A good addition is a sauce of Italian sausages (“salsiccia”).

Ingredients for 4 people:
for the gnocchi:
350g pumpkin (pulp)
350g potatoes
180g flour
1 egg
a pinch of cinnamon
a pinch of nutmeg
salt, pepper
parmesan cheese
for the sauce:
1 medium onion
350g “salsiccia” (Italian sausages)
butter
1 can tomatoes
Preparation:
Preheat the oven to 180°C.
Core the pumpkin and cut into big slices. Roast in the oven for 15 – 20 minutes.
Boil the potatoes in salt water.
Meanwhile, heat some butter in a frying pan and fry the onion. Chop the sausages, add them to the pan and fry for a few minutes. Then add the tomatoes from the can. Season with salt and pepper and allow the sauce to simmer for 40 minutes on a low heat. Stir occasionally.
Pass the roasted pumpkin through a sieve, the potatoes as well, place both in a bowl and thoroughly mix with the egg, flour, some cinnamon and nutmeg until a smooth dough is achieved.
Shape long sticks from the dough and use a knife to cut off small gnocchi.
Bring a large pot of salt water to the boil. Cook the gnocchi until they float to the top. Use a slotted spoon to remove the from the water.
Mix the gnocchi with the sauce and serve with fresh parmesan cheese. Buon Appetito!
